Only select vintages are used for the VINTAGE (2001, 2004, 2008) The grapes are harvested at peak ripeness into small crates and pressed immediately, though only the heart of the grape is used for the base wine. After 12 months of barrel aging, it is bottled for the second fermentation. It then rests on the lees—which contribute to its fine texture—for 10 years until it is shaken by hand and disgorged.
